Couscous
Steamed semolina under a stew of lamb, fish or vegetables, hotter and more tomato-heavy than the Moroccan version. Sfax and the coast do it with fish. The knowledge and practices around couscous are on the UNESCO intangible heritage list.
Family restaurants on a Friday, when it is the standard midday meal.
Harissa
Chilli paste with garlic, caraway and coriander, made from sun-dried peppers. It is on the table at every meal and its preparation was inscribed by UNESCO as intangible heritage in its own right.
Markets sell it loose by weight; every restaurant brings it with bread and olive oil before you order.
Brik
A sheet of malsouka pastry folded around a whole raw egg with tuna, parsley and capers, then deep fried. Eaten immediately and by hand, at an angle, so the yolk does not escape.
Everywhere, as a starter. Ramadan tables are not complete without it.
Lablabi
Chickpeas in a garlic and cumin broth ladled over torn stale bread, then finished with harissa, olive oil, a poached egg, tuna and capers. Assembled in the bowl in front of you.
Dedicated lablabi shops in the medinas, open from early morning. Winter breakfast food.
Ojja
Eggs poached in a tomato, pepper and harissa base, usually with merguez sausage or prawns, eaten straight from the pan with bread.
Cheap restaurants and beachfront places; the prawn version on the coast.
Salade mechouia
Peppers, tomatoes and garlic grilled over flame until the skins blacken, then peeled and chopped with olive oil and topped with tuna and boiled egg. Smoky rather than fresh.
Every restaurant, as a starter.
Kafteji
Peppers, courgette, pumpkin, potato and tomato fried separately, then chopped together on a board with egg. Street food, sold from a small counter and eaten in bread.

Makroudh
Diamonds of semolina dough packed with date paste, fried and soaked in honey. Kairouan is the city associated with them and sells them by the box.

Bambalouni
A ring of deep-fried dough rolled in sugar, handed over hot in paper. Simple and specifically associated with one place.

Mint tea with pine nuts
Strong sweet tea with fresh mint and a spoonful of pine nuts floating on top, which you eat at the end. Almonds are the alternative.
Cafes in every medina; the terrace cafes at Sidi Bou Said look over the gulf.
Medina of TunisTunis
A UNESCO-listed walled old city of covered souks organised by trade, with the Zitouna Mosque at the centre and merchant houses turned into cafes and workshops. Dense, and easy to lose your bearings in, which is the point.

One of the largest collections of Roman mosaics anywhere, lifted from villas across the country and installed in a former palace. It gives the ruins you visit afterwards their floors back.

The Punic and Roman city on the coast north of Tunis, spread across several separate sites — the Antonine Baths on the shore, Byrsa hill, the ports. It is scattered, so allow travel time between them.

A clifftop village of whitewashed walls and blue doors above the Gulf of Tunis, on the same light rail line as Carthage. Crowded by mid-morning and much better early or late.

Louage
Shared long-distance cars that leave when the seats are full rather than to a timetable, from a dedicated station in each town. The stripe tells you the range: red for intercity, blue for regional. This is how most Tunisians travel.

The line from Tunis Marine station out along the lagoon to La Marsa, stopping at Carthage and Sidi Bou Said. Old, slow and the single most useful piece of transport for a visitor to Tunis.

SNCFT runs the main line down the coast from Tunis through Sousse and Sfax toward Gabès, plus the metro léger tram network within Tunis. Comfortable enough in first class and cheap.

Intercity coach
SNTRI and regional companies run coaches to the towns the railway does not reach, including the desert south. Slower than a louage but with a fixed departure time and a reserved seat.

Car hire
The practical choice for Dougga, the mountain oases and the south. Roads on the main routes are good, police checkpoints are frequent and routine, and you should carry your documents. Desert tracks require a 4x4 and, in some border areas, a permit and a guide.

Ride-hailing here has an unsettled legal status — Bolt was suspended and withdrew from the country, and the mix of apps operating has changed more than once. Check what is working when you arrive rather than relying on one name. The yellow metered taxis remain the fallback everywhere; insist on the meter, and expect a surcharge at night.
