Khachapuri
Cheese bread, in regional forms. Imeretian is a filled round; Adjarian is boat-shaped with an egg and butter cracked into the molten cheese at the table.

Khinkali
Large twisted soup dumplings, usually spiced pork and beef. Held by the knot, bitten, the broth drunk, and the knot left on the plate — eating it is counted.
Dedicated khinkali houses in Tbilisi; the mountain regions do a lamb version.
Badrijani nigvzit
Fried aubergine rolled around a walnut and garlic paste, topped with pomegranate seeds. The standard opener at any table.

Mtsvadi
Skewered meat grilled over grapevine cuttings, served with onion and pomegranate. Georgian barbecue, and a social occasion more than a dish.

Pkhali
Vegetable and walnut pastes — spinach, beetroot, aubergine — served as small mounds with pomegranate. Naturally vegan and a good deal of the Georgian table is.

Chakapuli
Lamb or veal stewed with tarragon, sour plums and white wine. Spring food, sharp and herbal.

Churchkhela
Nuts threaded on string and repeatedly dipped in thickened grape must, dried into a candle shape. Sold everywhere and often mistaken by visitors for a candle.

Qvevri wine
Wine fermented in buried clay vessels, a method dating back thousands of years and UNESCO-listed. Amber wine made this way is Georgia's signature.

Shared minibuses running fixed routes, leaving when full rather than to a timetable. The backbone of intercity travel, cheap and ubiquitous.

A two-line metro and an extensive bus network, both paid with a Metromoney card or contactless bank card. The metro is deep and Soviet-built.

Georgian Railway connects Tbilisi with Batumi, Zugdidi and Kutaisi. The Batumi service is comfortable and a genuine alternative to the road.

Hired driver
Hiring a car with a driver for a day is common, affordable and often the practical way to reach Kazbegi, Kakheti or Vardzia. Arranged through guesthouses or agencies.

Possible but demanding. Mountain roads are rough, driving standards are assertive, and routes like the Abano Pass to Tusheti require a proper 4x4 and experience.
