Bryndzové halušky
Small potato dumplings folded through bryndza, a soft, sharp sheep's cheese, and topped with fried bacon and its fat. The national dish, and heavier than it sounds.
Any salaš, the roadside sheep dairies along the mountain roads, where the cheese is made on site.

Bryndza is the spreadable soured sheep's cheese; oštiepok is the smoked egg-shaped one, parenica the rolled ribbon, and korbáčiky the plaited threads sold in bundles.

Kapustnica
Sour cabbage soup with smoked sausage, dried mushrooms and often prunes. Eaten all winter and unmissable on Christmas Eve, when every family claims the correct recipe.
Traditional restaurants from autumn; Christmas markets serve it in cups.
Vyprážaný syr
A thick slab of cheese breaded and deep-fried, served with chips and tartare sauce. The default Slovak pub order and the standard vegetarian option on older menus.

Lokše
Thin, soft potato flatbreads cooked dry on a griddle, then brushed with goose or duck fat and filled with liver, poppy seed or plum jam.
The goose feast season around Slovenský Grob near Bratislava, from late summer into autumn.
Šúľance s makom
Rolled potato dough fingers tossed in butter, ground poppy seed and sugar. Sweet, but served as a main course rather than a dessert.

Žinčica
The whey left from making bryndza, drunk warm or cold. Sour, salty and an acquired taste, but it is what shepherds have always drunk.

Skalický trdelník
Sweet dough wound around a spit, baked over coals and rolled in sugar and ground walnut. The version from Skalica holds a protected geographical indication; the versions sold on tourist streets are a different and much newer thing.

Small Carpathian and Tokaj wine
Slovakia has a real wine industry that few visitors expect. The Small Carpathian route north of Bratislava does crisp whites; the Slovak side of the Tokaj region on the Hungarian border makes sweet botrytised wine under the same name.

Borovička and Demänovka
Borovička is a juniper spirit, drier than gin and drunk neat. Demänovka is a bitter herbal liqueur from the Low Tatras, sold in a sweeter and a sharper version.
Any bar; mountain huts serve borovička as standard.

A compact centre of narrow streets under a squared-off white castle on the hill, walkable in an afternoon. The Danube embankment and the UFO bridge lookout are a short walk from the middle.

Ruins on a crag where the Morava joins the Danube, at the point where the Iron Curtain ran. A memorial at the foot records those shot trying to cross.

The eastern capital, with St Elisabeth's, the largest church in the country, at the head of a long spindle-shaped main square. A different, less Austrian city than Bratislava.

ZSSK runs the network, with the Bratislava–Žilina–Poprad–Košice main line the spine of the country. InterCity services are faster and reservable; regional trains are slow but reach the Tatra foothills.

Tatra electric railway
A narrow-gauge electric line links Poprad with Starý Smokovec, Tatranská Lomnica and Štrbské Pleso, with a rack railway climbing the last stretch. It is the practical way to move between Tatra resorts without a car.

RegioJet, FlixBus and Slovak Lines run comfortable coaches, often quicker than the train between Bratislava and the east, and very frequent on the Bratislava–Vienna run.

Trams, trolleybuses and buses on time-based tickets bought from machines or the app; validate as you board. The same ticket covers all three modes.

Motorways require an electronic vignette registered to the number plate, bought online or at petrol stations before you join one. The D1 runs most of the way east; mountain valley roads are narrow and slow in winter.

Bolt
Bolt is the reliable option in Bratislava and Košice. Uber's presence in Slovakia has come and gone, so do not plan around it. Outside the two big cities you are back to booking a taxi by phone.
